Homemade Keto Mayo Avocado Egg Salad

Say hello to the easiest Keto Mayo I’ve ever made! It also happens to be the only Keto mayonnaise I’ve ever made, but I digress. Do this:

Keto Mayo Recipe

In your single serving Ninja Blender Cup, crack one hormone-free egg, yes, include the egg whites! Blend with 1/2 t mustard, 1 T Apple cider vinegar, pinch of Keto safe sweetener, and Himalayan pink salt. Then add 1 cup avocado oil and blend more. Done. Chill that Keto Mayo and get a bowl for the other ingredients. (Next time I will add a splash of lemon juice, but I was out). Now I’ve read that this will last just a few days, so you might want to whip it up specifically for a recipe. Well, looking here…I just happen to have an idea for you below!

Keto Avocado Egg Salad

One ripe avocado, two hard boiled eggs, 2 grape tomatoes, 1/4 cup Keto Mayo, chopped dill pickles. If my fridge had been stocked properly, green pepper and celery would have been delicious. Or grilled chicken. Served on a bed of greens. Make it your own, Keto Warriors! Oh, some fathead crackers or sour cream Keto “potato” chips would be perfect!

Dairy-Free Keto Berry Slush

So I was out picking weeds and watering flowers (July in the Midwest, aka 90+ degrees) when a fierce thirst came over me. With the keto way of eating, dairy is allowed, but it’s not a requirement. Dairy doesn’t bother me, but I do see sense in cutting back, which is what I have been trying to do of late. It was at this moment that the dairy-free keto berry slush was born.

Dairy-Free Keto Berry Slush Recipe

In a blender (I used the single serving blender component of my Ninja Blender), combine the following ingredients, blend, admire, sip and savor!

2 ounces Spindrift lemon flavored carbonated water

1/4 cup Thai Kitchen coconut milk1/2 to 1 T Pyure Keto friendly sweetener

Pinch of salt

3 medium strawberries (or the berry of your choice)

1 C ice

Maybe a splash of water if it’s too thick, or more Spindrift

Reminder to Read Labels

One might assume the carb count in these innocent-looking unsweetened cans of carbonated water would be the same. One would be wrong. The grapefruit has 4 carbs per can, so if you’d like to make a Keto Berry Slush with that flavor, 2 ounces would equal 1 carb. The raspberry lime flavor has 2 carb per can. The lemon…1 carb per can, and y’all, I’m gonna call that ZERO carbs in this recipe, because I ain’t counting 1/4 of a carb! :-)I suppose this could be considered a fat bomb. If you’ve heard that term and need more explanation, read this post. If you wanted to be festive and turn this into a libation, I think a little rum would do nicely. You’ve heard of location, location, location? Well with keto, making simple dishes sometimes comes down to one ingredient: bacon, bacon, bacon. The nitrate-free variety for the cleanest eating possible. This Keto Chicken Bacon Bake recipe takes all of 20 minutes to toss together. Even less time if you’re doing the dairy-free version. With the healthy fats, you stay satiated more so than simply low-carb eating without the filling and brain-feeding fats.

Keto Chicken Bacon Bake Recipe

  1. Dice two chicken breasts and season with Himalayan pink salt, pepper, garlic, onion powder.
  2. In small pan, melt 2 ounce full-fat cream cheese in 1/4 cup bone-sipping broth.
  3. Stir in diced chicken, 1 T avocado oil and pour into casserole dish.
  4. Layer on 2 cups of chopped broccoli and 3 strips crumbled nitrate-free bacon.
  5. Top with 4 ounces of cheese, your choice! Pictured is provolone and colby jack.
  6. Bake at 375 for 20 minutes. Eat, swoon, sit back full and happy!

  2. In casserole dish, layer in chicken, 2 cups chopped broccoli, 3 strips crumbled nitrate-free bacon.
  3. Top with 4 ounces of dairy-free cheese, your choice! Pictured is Daiya mozzarella and cheddar.
  4. Bake at 375 for 20 minutes.

What Makes This Keto

1. Healthy Fats: dump the old oils that are inflammatory (corn, canola, vegetable, soybean), and bring in the healthy keto friendly oils (olive, coconut, avocado, grade-fed butter, ghee, nitrate-free bacon fat).

2. More Healthy Fats: cheese and cream cheese

3. The Salt: Himalayan Pink salt has micronutrients that table salt does not. And to avoid the Keto Flu, which is a loss of electrolytes (potassium, magnesium, salt), YOU NEED SALT. Especially if you’re doing clean keto, which means ingredients count. Dirty keto means people are concerned only with carb count.
