Not kidding about the breakfast thing. Soft keto brownies are made from eggs, avocado, coffee and more, so…breakfast! I still have not learned to measure but I watched two videos and tossed it all in my ninja blender. One recipe was for keto chocolate donuts, which showed brewed coffee as an ingredient, and the other was for keto brownies with avocado as the secret ingredient. I added a bunch of nuts that I had ground earlier. Coconut flour, swerve sweetener, vanilla, baking soda, butter, cocoa round out the ingredient list, baked at 375 for about 25 minutes. Topped with a keto chocolate frosting from Kerrygold butter, vanilla, confectioner’s Swerve, and dark cocoa. It absolutely worked. My kid ate it! I will work on nailing down a recipe, but I am beyond excited that these were not a disaster, even though it appears I destroyed my kitchen in the process!
