One-Pan Dinner: Keto Sloppy Joes!

Flavors from India make these sloppy joes zing!

This is an easy, fast keto meal with a real twist on traditional sloppy Joes. And it works for families with non keto eaters in the house.

In the video, which is only a minute long, I misspoke when I said olive oil. I meant avocado oil. Both are healthy fats but olive oil is better for low heat cooking or cold dishes.

Ingredients: ground beef or turkey, onion, bell pepper*, celery, pine nuts, cumin, curry, ginger, cilantro, coconut milk, low-sugar tomato sauce*, salt & pepper

  1. Brown one pound of meat with 1/2 onion, one bell pepper and 2 stalks chopped celery, 2 tablespoons pine nuts. Add 1 teaspoon fresh ginger, 1/2 teaspoon cumin, 1 teaspoon curry.
  2. Stir in 1/2 cup of coconut milk and one cup tomato sauce. Mix well over medium heat.
  3. Turn off heat and stir in 1 tablespoon chopped cilantro.

Choose a nice crunchy green to serve with the meat, or top with cheese, or make fathead dough pizza crust to dip and scoop. And the rest of the fam can eat their traditional sloppy joe on bread. This is one of many ways to go keto even when others in the house don’t want to. When they see your increased energy, clearer skin, trimmer frame, and fewer prescription meds in the cabinet, they may join you!

*Omit these ingredients if you cannot eat nightshades, pictured here without tomato sauce or coconut milk…still very savory!
