Dairy-Free Keto Berry Slush

So I was out picking weeds and watering flowers (July in the Midwest, aka 90+ degrees) when a fierce thirst came over me. With the keto way of eating, dairy is allowed, but it’s not a requirement. Dairy doesn’t bother me, but I do see sense in cutting back, which is what I have been trying to do of late. It was at this moment that the dairy-free keto berry slush was born.

Dairy-Free Keto Berry Slush Recipe

In a blender (I used the single serving blender component of my Ninja Blender), combine the following ingredients, blend, admire, sip and savor!

Ninja Blender with 2 Single Serving Blending Cups
Ninja Blender with 2 Single Serving Blending Cups

2 ounces Spindrift lemon flavored carbonated water

1/4 cup Thai Kitchen coconut milk1/2 to 1 T Pyure Keto friendly sweetener

Pinch of salt

3 medium strawberries (or the berry of your choice)

1 C ice

Maybe a splash of water if it’s too thick, or more Spindrift

Reminder to Read Labels

One might assume the carb count in these innocent-looking unsweetened cans of carbonated water would be the same. One would be wrong. The grapefruit has 4 carbs per can, so if you’d like to make a Keto Berry Slush with that flavor, 2 ounces would equal 1 carb. The raspberry lime flavor has 2 carb per can. The lemon…1 carb per can, and y’all, I’m gonna call that ZERO carbs in this recipe, because I ain’t counting 1/4 of a carb! :-)I suppose this could be considered a fat bomb. If you’ve heard that term and need more explanation, read this post. If you wanted to be festive and turn this into a libation, I think a little rum would do nicely. Here is more about alcohol and keto.

Final Macro Count: 5g net carbs | 12g fat | 0 protein | 135 calories

Seriously. Ice cream that is good for you. And customizable. And easy. In TWO minutes, if you’re a slow poke! Need I say more? Let’s get to the ingredients.

The Must-Have Basics: A kick-butt blender. Ice. Stevia. Full-fat cream. Salt. That’s it!

The Customizables:  Vanilla. Chocolate. Cinnamon. Strawberries. Blueberries. Sugar-free coconut. Coconut milk. Nuts. Avocado. What else ya got? Spinach? Sure, I’ve made spinach ice cream!

The Amounts: 1 cup crushed ice. 1/2 cup water (or coconut milk, only 1 net carb per cup). 1/4 cup full-fat whipping cream. 1 tablespoon granular stevia. 1 teaspoon unsweetened cocoa. 1/2 teaspoon real vanilla. Dash of Redmond’s Mineral Salt. 2 tablespoons unsweetened coconut. 1/4 avocado (optional but great for added creaminess).

The blender is key, really, because we’re using ice here. And if you’re brave, spinach! I’ve had a ninja blender for four years and it works great. Comes with a single serving cup that you blend in as well as the regular size for larger portions. I’ve seen blenders for $300 plus?!? Pffft. Ninjas are 1/3 of that price. If you’d like a super duper keto resource, this is the book I bought. Well researched. Pretty color pics. Organized and cross referenced. For more details on how to get your pantry keto-ready, see this Stock Your Kitchen post.

What do I do when I am not ketoing? I am an author. Harper Collins bought my first novel in 2010, and I have since put out an electronic version of Escaping The Tiger. Check out these reviews. Would love for you to read it. Cheers, Keto Warriors!

Escaping The TIger

Creamy Keto Shakes

Look at these luscious green ingredients! Talk about green, with fiber! Creamy shakes or smoothies come from one of nature’s best foods: avocados. You can’t taste it OR the spinach, when blended with full-fat cream, stevia, salt, vanilla and ice chips. Or you can use berries. Or cocoa. Or coconut milk. Or cinnamon. What’s your pleasure?

1 cup crushed ice – 1/2 cup water – 1/4 cup full fat whipping cream – 1 tablespoon stevia – 1/4 avocado – 1/2 teaspoon vanilla – pinch mineral salt

Squeamish about the avocado? Start with cocoa or low-carb fruit you DO like!

You will need a good blender, because of the ice and especially if you are sensitive to texture. My ninja annihilates the spinach so there’s no grit. It comes with that single serving cup you see that has a lid to attach to blender, as well as the full size container for multiple servings. Experiment with varying amounts of the ingredients as you ease into a keto way of eating. Create and explore flavors.

Free yourself from sugar addiction by eating full fat, healthy oils like coconut oil, avocado oil (or the whole avocado), olive oil, ghee, grass-fed butter. Avoid processed foods that have removed the fat and replaced it with sugar. Eating fat does not make you fat. Eating sugar does. Research. Reclaim your life. Don’t fall for products that claim to be solutions. You can do this!
