Keto Peanut Butter Cup, a Reece’s Knockoff

Keto Peanut Butter CupWho says adapting to the ketogenic way of eating means an end to sweets? Not me! I have to LIVE, my friends. So allow me to show you a Keto peanut butter cup that will have Reese’s running in their sugar-filled boots! Here goes…

Keto Peanut Butter Cup Recipe

1. In a pan on low heat, melt and stir the following: 8 T kerrygold butter, 1 T sugar-free peanut butter, 1/2 t vanilla, 1-2 teaspoons Pure Monk brand monk fruit.

2. Stir in 1 cup almond flour. Set aside.

3. In separate pan, melt dark chocolate of your choice. For this recipe, I use Moser Roth 85% cocoa bars from Aldi (3 individually wrapped bars). Adding Keto sweetener is optional. Lily’s is a popular brand of sugar-free chocolate among Keto enthusiasts.

4. Drip about 1 teaspoon chocolate into mini baking cups and chill for 5 minutes.

5. Add 1 T almond flour mixture to each cup, pat down, and top with remaining dark chocolate. Almonds are optional. Chill and eat!

*Note for the Keto Police: Moser Roth chocolate has a wee bit of sugar. If someone says sugar isn’t Keto, I say keto(sis) is a metabolic state, not a food. We each do the best we can!

Monk Fruit is extraordinarily sweet, so if you use a different keto sweetener, you’ll need to adjust the recipe accordingly. It is now my favorite sweetener, after using Pyure, which is a blend of stevia and erythritol. Pyure is great for recipes since it measure the same as sugar, but I am digging monk fruit now. Pure Monk Fruit is harder to find, so I ordered mine online. I have seen Pyure in Walmart and grocery stores. .

This Kalamata Keto Salad with Parmesan Chicken will have you thanking the Greek gods for the taste explosion that satiates the belly with healthy Keto fats and satisfies the palate with savory toppings. And of course, the possibilities to make it your own are limited only by your inclination to experiment.

Easy Keto Parmesan Chicken Recipe

1. In a bowl, whisk one egg, one tablespoon heavy whipping cream, salt and pepper.

2. Add one sliced or diced chicken breast. A fat 8 ounce breast is about the right size.

3. Stir and coat, then mix in 1/4 cup freshly grated Parmesan & 1/2 T dried parsley.

4. Brown on stove in 1/4 cup coconut oil. Flip and brown other side.

Homemade Keto Mayo Avocado Egg Salad

Say hello to the easiest Keto Mayo I’ve ever made! It also happens to be the only Keto mayonnaise I’ve ever made, but I digress. Do this:

In your single serving Ninja Blender Cup, crack one hormone-free egg, yes, include the egg whites! Blend with 1/2 t mustard, 1 T Apple cider vinegar, pinch of Keto safe sweetener, and Himalayan pink salt. Then add 1 cup avocado oil and blend more. Done. Chill that Keto Mayo and get a bowl for the other ingredients. (Next time I will add a splash of lemon juice, but I was out). Now I’ve read that this will last just a few days, so you might want to whip it up specifically for a recipe. Well, looking here…I just happen to have an idea for you below!

Keto Avocado Egg Salad

One ripe avocado, two hard boiled eggs, 2 grape tomatoes, 1/4 cup Keto Mayo, chopped dill pickles. If my fridge had been stocked properly, green pepper and celery would have been delicious. Or grilled chicken. Served on a bed of greens. Make it your own, Keto Warriors! Oh, some fathead crackers or sour cream Keto “potato” chips would be perfect!
