Keto Peanut Butter CupWho says adapting to the ketogenic way of eating means an end to sweets? Not me! I have to LIVE, my friends. So allow me to show you a Keto peanut butter cup that will have Reese’s running in their sugar-filled boots! Here goes…

Keto Peanut Butter Cup Recipe

1. In a pan on low heat, melt and stir the following: 8 T kerrygold butter, 1 T sugar-free peanut butter, 1/2 t vanilla, 1-2 teaspoons Pure Monk brand monk fruit.

2. Stir in 1 cup almond flour. Set aside.

3. In separate pan, melt dark chocolate of your choice. For this recipe, I use Moser Roth 85% cocoa bars from Aldi (3 individually wrapped bars). Adding Keto sweetener is optional. Lily’s is a popular brand of sugar-free chocolate among Keto enthusiasts.

4. Drip about 1 teaspoon chocolate into mini baking cups and chill for 5 minutes.

5. Add 1 T almond flour mixture to each cup, pat down, and top with remaining dark chocolate. Almonds are optional. Chill and eat!

*Note for the Keto Police: Moser Roth chocolate has a wee bit of sugar. If someone says sugar isn’t Keto, I say keto(sis) is a metabolic state, not a food. We each do the best we can!

Monk Fruit is extraordinarily sweet, so if you use a different keto sweetener, you’ll need to adjust the recipe accordingly. It is now my favorite sweetener, after using Pyure, which is a blend of stevia and erythritol. Pyure is great for recipes since it measure the same as sugar, but I am digging monk fruit now. Pure Monk Fruit is harder to find, so I ordered mine online. I have seen Pyure in Walmart and grocery stores. .

That is no tortilla, Keto warriors. That is a cheese wrap. Low carb. Healthy fat. Savory gluten free Keto enchiladas.

Keto Enchilada Ingredients

Chicken breast, cream cheese, canned red enchilada sauce, canned green chilies, red onion, bell pepper, avocado oil, cheddar cheese slices, cilantro, scallions, black olives, salt, pepper, liquid aminos (or coconut animos), garlic, chili powder.

Keto Enchilada Directions

1. Marinate and then sauté the following in 1/4 cup avocado oil: 8 ounce chicken breast sliced into strips, 1 T Liquid or coconut aminos, 1/2 red onion and 1/2 red bell pepper cut into large pieces, 1/2 t minced garlic, salt, pepper, chili powder.

2. Arrange 2 cheddar cheese slices per enchilada onto parchment paper and bake at 400 degrees until bubbly. Don’t overcook, or they will not be pliable.

3. Pull veggie pieces from pan and put in blender with 1 T softened cream cheese, 2 T green chilies. Blend and add back to chicken.

4. Once cheese slices are slightly cooled, add chicken mix on top and roll into cheese wrap. Arrange on plate.

5. Top with warmed red enchilada sauce, black olives, scallions, cilantro.

Omg. OMG. Oh. Mygawd. Homemade Keto Pancake Syrup might be my greatest creation to date. Dear readers, you must understand…before Keto, I barely cooked. Beyond boxed Mac and cheese that is, and sticking a spoon in a half gallon carton of mint ice cream. I will not babble a moment longer. Here is the recipe.

Homemade Keto Pancake Syrup

1. Heat the following in the microwave for 30 seconds: 2 medium strawberries, 5 fat blueberries, 1 T Kerrygold butter, 1 T coconut milk, pinch of your favorite Keto sweetener, 2 drops of vanilla, dash of salt.

2. Blend that beautiful concoction in your *food processor. Done.

Macros: 7 net carbs | 13g fat | 140 calories | 0g protein

*If you don’t have a processor or blender, this in the Ninja I have and love because of the single serving cups perfect for recipes like this! 5 years old and no problems.

I recently started using pure Monk Fruit keto-safe sweetener. Very, very sweet so it takes just a tiny pinch. I also like this blend of stevia and erythritol which is granular and about as sweet as real sugar, so easy for following recipes closely.

The Keto Pancake

Now the pancake itself is from a Paleo Pancake Mix I bought at Costco. Note the crispy edges. Yep, it is cooked in butter. For my teenagers who are not full Keto, I combine the paleo pancake mix with regular mix. If you’re transitioning to Keto, nothing wrong with making small changes as you learn…anything to reduce carbs will help you get there.

What’s My Keto Story?
